1 kg of boneless, skinless chicken breast
Zest of 1 medium sized lemon
1/2 cup of Balkis Lemon juice
1/2 cup of Balkis Orange juice
1 teaspoon of salt
1/2 teaspoon of ground pepper
2 garlic cloves minced
1/4 cup of chopped fresh mint
1/3 cup of virgin olive oil
3 bells peppers (1 red, 1 yellow and 1 green)
1 large red onion
Place the Balkis Orange and Lemon juices in a medium sized bowl. Add the lemon zest, salt, pepper, garlic, mint and mix well until it is a marinade. Cut the chicken breast into small chunks suitable for skewers. Place the chicken chunks in the marinade and pour into a re-sealable, gallon sized bag. In the refrigerator, let it marinade for at least one hour or even overnight.
Cut the peppers and onions into large wedges suitable for barbeque (or grill). Place the kebabs on metal skewers by alternating chicken, onion, and then bell pepper. Barbeque (or grill) over high heat for 3-5 minutes on each side or until chicken is well cooked. The chicken would be ready once the juices run clear.
Remove the chicken skewers from the barbeque (or grill) and let rest on a foil tented plate.
Cooking tip: For juicier tasting kebab, marinade the chicken for more than the one hour, minimum suggested time. You can also adjust the tenderness of the chicken based on the grilling time.
Pairing tip: The citrus chicken kebabs are a healthy and low fat main dish. You can easily pair the kebabs with a salad of your favorite mixed greens dressed with extra-virgin olive oil and Balkis 100% Fresh Lemon juice.
This recipe takes at least an hour to prepare and makes approximately 6 chicken skewers. Eat with your fingers!
